Zeus Chocolate Chip Cookies:
4 lbs butter
3 lb pure cane sugar 3 lb brown sugar
1.5 quart eggs (Aprox. 28 eggs) 2 oz vanilla extract
8 lbs chocolate chips 7 lbs pastry flour
1.25 oz baking soda
oz salt
Creaming method
Chop cold butter into 1” cubes add to mixer bowl
Mix (speed 1) for 60 sec
Mix (speed 2) for 60 sec
Mix (speed 3) for 60 sec
Add all sugar and mix (speed 2) for 90 sec
Combine eggs and vanilla
Add 1/3 egg mixture and mix (speed 2) for 30 sec
Add 1/3 more egg mix and repeat
Finish adding egg and mix 30 sec more
Sift together flour and baking soda then stir in salt
Set mixer to ‘STIR’ and add flour mixture in 3 batches till mixed
Add all chocolate chips and mix (‘STIR Speed’) till incorporated
Chill dough then portion with #24 scoop (red handle)
Bake @ 350 approx. 10 minutes (out of freezer)
