Zeus Chocolate Chip Cookies:

4 lbs butter

3 lb pure cane sugar 3 lb brown sugar

1.5 quart eggs (Aprox. 28 eggs) 2 oz vanilla extract

8 lbs chocolate chips 7 lbs pastry flour

1.25 oz baking soda

    1. oz salt


      Creaming method

      1. Chop cold butter into 1” cubes add to mixer bowl

      2. Mix (speed 1) for 60 sec

      3. Mix (speed 2) for 60 sec

      4. Mix (speed 3) for 60 sec

      5. Add all sugar and mix (speed 2) for 90 sec

      6. Combine eggs and vanilla

      7. Add 1/3 egg mixture and mix (speed 2) for 30 sec

      8. Add 1/3 more egg mix and repeat

      9. Finish adding egg and mix 30 sec more

      10. Sift together flour and baking soda then stir in salt

      11. Set mixer to ‘STIR’ and add flour mixture in 3 batches till mixed

      12. Add all chocolate chips and mix (‘STIR Speed’) till incorporated

      13. Chill dough then portion with #24 scoop (red handle)

      14. Bake @ 350 approx. 10 minutes (out of freezer)
